Potatoes arrived in China during the late Ming dynasty (16th-17th century) via European traders and missionaries, with the first documented Chinese reference dating to approximately 1650 (FAO IYP 2008, PMC research). Initially, potatoes remained a minor crop for centuries, grown mainly in cooler northern and western regions and mountainous provinces like Yunnan, Guizhou, Sichuan, and Gansu where rice cultivation was difficult.
The crop's importance grew dramatically after the Great Chinese Famine (1959-1961), when production rose significantly. China's transformation into the world's leading potato producer occurred in 1993, when a dramatic surge against slumping European output propelled the country to the #1 position globally. According to government and peer-reviewed sources, this 1990s surge was credited to technological advancements, including the establishment of China's first organic potato enterprise in Heilongjiang province.
A pivotal policy shift occurred in 2014-2015 when China's Ministry of Agriculture formally listed potato as the country's fourth staple food alongside rice, wheat, and maize. The "Potato as a Staple Food" initiative launched in 2015 aimed to elevate potatoes to the same dietary status as traditional grains, promoting potato flour as a wheat flour substitute and encouraging potato use in traditional dishes.
Today, China produces 94.4 million tonnes of potatoes annually (FAOSTAT 2022) and has developed significant social and economic programs around the crop. According to Chinese Academy of Agricultural Sciences data, over 70% of China's potatoes are grown in former poverty regions, with farmers deriving one-third of their income from potatoes. The government has registered 378 high-quality varieties and developed over 300 staple food products, including innovative "Potato Rice" technology launched in 2024.
