China is the world's largest potato producer, growing 93.5 million metric tons in 2023 according to FAOSTAT, representing 24.4% of global production. This maintains China's position as the dominant producer, with output slightly down from 94.4 million tonnes in 2022.
India ranks second with 60.1 million metric tons in 2023 (15.7% of world production), up from 56.2 million tonnes in 2022. Together, China and India produce approximately 40% of the world's potatoes, demonstrating Asia's dominance in global potato production.
The gap between China and India is substantial — China produces about 56% more potatoes than India. Ukraine rounds out the top three with 21.4 million metric tons in 2023, despite ongoing challenges that have affected agricultural production. Asia overall produces 175.8 million metric tons annually, making it by far the largest potato-producing continent globally.
China's massive production scale reflects both its large agricultural area and significant domestic demand for potatoes as both a food crop and industrial input for starch production.
