Andean Farmers Were Freeze-Drying Potatoes Centuries Before Freeze-Drying Was Invented

Freeze-drying gets talked about like a 20th-century industrial invention — the process behind astronaut ice cream and instant coffee. But high in the Andean Altiplano, Quechua and Aymara communities have been freeze-drying potatoes using nothing but night frost, daytime sun, and bare feet for well over 700 years, in a technique that still puts food on the table every week.

Older Than the Inca Empire

The word "chuño" comes from Quechua, and roughly translates to "frozen potato" — or possibly references the product's distinctively wrinkled appearance, depending on the source. Archaeological evidence at Tiwanaku, on Bolivia's Collao Plateau, places chuño production before the 13th-century rise of the Inca Empire, meaning it was already established Andean technology well before Inca imperial expansion, not an Inca invention. The Inca state relied on it heavily regardless — Spanish chronicler José de Acosta documented the practice in writing in 1590, one of the earliest European records of the technique, and Inca soldiers depended on chuño during military campaigns specifically for its portability, long shelf life, and nutritional density. It functioned as genuine military logistics technology, in a role comparable to how other historical empires depended on preserved, portable rations to sustain extended campaigns.

The Process: Frost, Sun, and Feet

Chuño production is a precise application of high-altitude climate physics, and it only works within a fairly narrow set of conditions: frost-resistant potato varieties grown above roughly 3,500 to 3,800 metres elevation, where nighttime temperatures reliably fall below freezing — ideally around -5°C — while daytime temperatures climb back above freezing under intense high-altitude sun. That daily freeze-thaw swing, repeated over about five days, is what actually does the preservation work.

In practice: freshly harvested potatoes are left out overnight until frozen solid through. During the warmer daylight hours, families trample the frozen tubers underfoot on flat, dedicated processing grounds known as chuñochinapampas — physically flattening them to expel moisture and remove skins. This works far more effectively on a frozen potato than a fresh one, because the freezing has already ruptured the tuber's cell walls, making the trapped moisture far easier to press out.

Two Products, Not One

Repeating this freeze-trample cycle produces black chuño — made directly from the process without any washing step, and the more common of the two forms, still primarily produced and eaten within farming communities rather than sold commercially at scale. A second product, white chuño (also called tunta or moraya), adds a washing step after the initial freeze-drying: either sprinkling the potatoes with water on blankets, a method documented in Bolivia, or soaking them in river pools for roughly a week, as documented in Peru, followed by sun-drying. That extra step strips out more of the bitter compounds and dark pigmentation, yielding a lighter-colored, milder-tasting result — a genuinely different product from black chuño, not simply a higher grade of the same thing.

Why It Actually Works

The science is straightforward: the freeze-thaw-trample cycle strips out the great majority of a potato's water content, and because bacteria, mold, and other spoilage organisms need water to grow, a tuber with its moisture reduced this dramatically becomes a genuinely inhospitable environment for them. That's why chuño stays safely edible for months, and under proper storage, reportedly for years to decades. The same process shrinks the potato to roughly a fifth of its original size — a major win for storage and transport logistics on its own — and confers meaningful natural resistance to insect infestation as a side effect of removing nearly all the moisture insects would otherwise be drawn to.

Still on the Table Today

What makes chuño genuinely unusual among traditional food-preservation technologies is that it never got displaced. It remains an actively used ingredient in Peruvian and Bolivian cuisine today, appearing in dishes like chairo and jakonta soups, where its distinctive chewy texture and concentrated flavor are treated as essential to the dish, not a substitutable stand-in for fresh potato. Most pre-industrial preservation methods worldwide got quietly replaced once refrigeration arrived. Chuño mostly didn't — it's one of the rare cases of a centuries-old food technology staying in continuous, everyday use right through the arrival of the modern cold chain, not because refrigeration wasn't available, but because the specific texture and flavor chuño produces simply isn't something refrigeration can replicate.
