How big is China's potato industry?
China operates the world's largest potato industry by production volume, producing 90.32 million tonnes in 2018 from 4.81 million hectares — representing 24.53% of global potato production (China Potato Processing Industry Research, Potato Research 2023).
The industry spans both massive production and rapidly growing processing sectors. China has cultivated potatoes across 5.77 million hectares with output reaching 99.21 million tonnes in 2017, according to FAOSTAT data. The scale becomes evident when examining regional examples: Zhaotong city in Yunnan province alone planted 2.37 million mu (158,000 hectares) producing 3.5 million tonnes in 2024, supporting 1.1 million farming households representing 4 million people — 65% of the city's population.
On the processing side, China currently processes approximately 15% of its total potato output (~15 million tonnes annually), though this represents enormous untapped potential compared to 60%+ processing rates in the US/Canada and 70-80% in Germany. The frozen French fry segment exemplifies this growth trajectory: China became a net exporter for the first time in 2022, with January-October 2024 exports reaching 155,100 tonnes and eight major manufacturers producing 1.27 million tonnes in 2023 (China Customs General Administration data).
The government elevated potatoes to China's fourth staple food alongside rice, wheat, and maize in 2014, launching the "Potato as a Staple Food" initiative in 2015 to integrate potatoes more deeply into the national diet and drive processing industry development.
